It can be hard to consume all the chocolate goodness you may receive in such a short amount of time. Therefore, it is important to follow proper precautions to preserve the shelf life of your sweet treat.
There are many different forms of chocolate, such as cocoa powder, unsweetened, dark, semi-sweet, milk, ruby and white. The shelf life of each chocolate depends on proper storage to preserve its flavor and appearance.
This is based on food quality, not food safety. Most chocolates are safe to consume indefinitely, unless there are signs of spoilage (mold, odor, etc.). However, the longer a chocolate product sits, the more it can lose its flavor and quality.
Types of Chocolate and How Long They Keep When Stored Properly
Cocoa Powder Storage and Shelf Life
Cocoa powder is the ground product of roasted cacao beans and contains no fat or additives. It retains its best quality for three years with proper storage.
Unsweetened, Bitter, or Baking Chocolate Storage
Unsweetened, bitter or baking chocolate is pure solid chocolate containing 50-58% cocoa butter and no added milk or sugar. It retains its best quality for 2 years with proper storage.
Dark, Semi-Sweet, and Sweet Chocolate Storage
Dark, semi-sweet, and sweet chocolate contain varying amounts of cacao butter and sugar. Since there are various cacao percentages, the higher the percentage, the longer the chocolate can keep. It retains its best quality for 2 years with proper storage.
Milk Chocolate Storage and Shelf Life
Milk chocolate contains around 10% chocolate, along with milk solids, fats, and sugar. It retains its best quality for a year after opening, provided it is properly stored.
Ruby Chocolate Storage
Ruby chocolate contains ruby cacao beans. It retains its best quality within a year of opening and proper storage.
White Chocolate Storage and Shelf Life
White chocolate contains sugar, milk solids, fat and 20% cocoa butter. It retains its best quality for up to 6 months when stored properly.
When looking at the different variations of chocolate, it is easy to see that the more perishable ingredients and the lower the cacao content, the faster it will lose its quality.
Best Storage Tips to Prolong Chocolate Shelf Life
Store Chocolate in an Airtight Container
An airtight container blocks out oxygen, which prevents chocolate from oxidizing and losing flavor.
Store Chocolate in a Cool, Dry Environment
Store at room temperature between 65℉ and 70℉, with relative humidity lower than 50-55%.
Store Chocolate in a Dark Location
Like oxygen, light also contributes to oxidation.
Avoid Refrigerating Chocolate When Possible
Chocolate can absorb odors and moisture in refrigerated environments, leading to bloom, which is the white powdery look that appears on the surface of chocolate. If absolutely necessary, tightly wrap the chocolate to prevent contamination and limit moisture absorption.
Freezing Chocolate for Long-term Storage
Place chocolate inside a covered, airtight container or a heavy-duty freezer bag to preserve flavor. Freezing does not significantly affect shelf life and may induce bloom; however, it is a good option for chocolate to be used later for baking or melting.
