Did you know?

Squash is native to the Americas; remains have been found in Central America and Mexico dating back as far as 7000 BC.

Yellow varieties of squash provide numerous health benefits; high in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium. Yellow squash is also rich in manganese. For all squash varieties, choose glossy, small to medium sized squash; refrigerate summer squash for use within 3-4 days.
